Banana Bread
You’d think, by the sheer volume of bananas we buy, that we’re a family of monkeys or are raising monkeys. But as much as we love bananas, we got tired of it one day… so I decided to try a recipe I found online. It’s a recipe for banana bread and it makes use of two ingredients the kids would NEVER say no to – toasted walnuts and chocolate chips. Enjoy!
INGREDIENTS
1 egg
2 ripe bananas
1 cup flour
1/4 cup white sugar
1/4 cup brown sugar
1/4 cup melted butter
1/2 cup toasted walnut pieces
1/2 cup chocolate chips
1/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
DIRECTIONS
1. Preheat the oven to 350 degrees.
2. Grease your loaf pan and then flour it.
3. Over a medium heat, toast the walnuts in a dry skillet. Stir for 3-4 minutes before removing the skillet from the fire and allow to cool.
4. Sift salt, baking soda, baking powder, and flour into a bowl.
5. Mix thoroughly and then set side.
6. Using another bowl, mash the egg, bananas, sugar, vanilla extract, cinnamon, nutmeg, butter, and cloves and then mix them together as thoroughly as you can.
7. Get the first bowl (containing your flour mixture) and slowly pour its contents onto the second bowl. Do this slowly and be sure to mix well.
8. Add the walnuts and the chocolate chips and then stir.
9. Pour the mixture into the loaf pan.
10. Bake for 35-40 minutes or until it turns golden brown.
Handy Hint: Not sure what to do with overripe bananas you can’t use for banana bread? Put them in the freezer! Once the banana thaws, you won’t have to worry about the blackened skin. You can use them to make yummy banana cake!
